Put everything in the pot, except the kitchen sink!
I had just about every ingredient on hand, so it didn't take too long to put this soup together. Hope you enjoy.
1 lb ground beef
1/3 cup uncooked rice
1 tsp salt
1 raw egg
3 qts chicken stock, or part stock/part water
3 cloves garlic, chopped
4 stalks celery, chopped
3 onions, cut into quarters
4 lg carrots, peeled and sliced
1 can of diced tomatoes
Salt and pepper to taste
1 tsp cumin
A dash of cayenne (optional)
1 tsp dried oregano
Fresh spinach or other greens
Cilantro for garnish if desired
Preparation:
Mix ground beef with rice, salt and the raw egg. Form into meatballs.
Bring broth to a boil in a large pot. Turn down to a slow simmer and gently add meatballs. Simmer gently for 20 minutes.
Add the remaining ingredients except spinach. Simmer for 1 hour and 15 minutes or until rice in meatballs is cooked through (or cook all day in the crockpot). Add in the greens and simmer for an additional 15 minutes.
Serve hot with fresh flour tortillas, and with sour cream, shredded cheese, guacamole, cilantro, etc to put on top.

I already had thawed ground meat in the 'fridge, and I found some rice that was already cooked hiding in the 'fridge. I mixed these together along with the eggs, and salt.
I dug some Elk broth (yes, I said Elk broth..) out of the freezer, and added in more water. I had this simmering on the stove while I dropped the meat balls in.
At first the meat balls will sink to the bottom of the pot, but once they begin to cook they will rise to the top.
I let that simmer for awhile while I chopped up carrots, celery, garlic, onions, and so forth. I dumped in my can (<Ahh, can!!!) of diced tomatoes towards the end of the cooking. And, I'm proud to say I didn't chop another finger off.
Once everything looks and tastes done you may consume it. I served it with shredded cheese. Everybody seemed to like it..next time I have lots of kitchen sinks, I'll know what to fix!
Oh, and uh the bunnies like it when I fix kitchen sinks..er I mean..soup, because they get all the vegetable trimmings!!
Today's menu consisted of: Celery, carrots, and fresh grass that I found growing by the fence.
Alora loves celery!
Alan "Momme I love celery too! How 'bout you bring me a bucket full??"
"Oh, and uh while you're at it..scratch my nose."
Do you like to fix kitchen sinks..I mean er...soups?
