Mini German Pancakes

Here is a quick, yummy go to recipe when the family is tired of eggs and toast.

Mini German Pancakes



  • 1 cup milk
  • 6 eggs
  • 1 cup flour
  • 1/2 teaspoon salt
  • 1 tsp. vanilla
  • 1/4 cup butter
  • 1 tsp. orange zest (optional...I didn't put this in mine)
Preheat oven to 400F.

The recipe says to use a blender to mix all the ingredients up, but instead I just used some elbow grease to mix'em up. You may blend them as you wish. ; )




 Grease muffin tins well. Pour about 1/4 cup batter into each muffin tin (tin should be about half full). Bake for 15 minutes, or until puffy and golden on top. Remove from oven and let them cool for a minute or two. They will be fluffy, and then when cooled, will fall down in the middle. Put jelly, honey, or what ever topping you wish on them, and enjoy!


Mmm..don't those look good!


The guys enjoyed them with fresh Maple Syrup.

  1. Hmm, this is interesting. I have a German Pancake recipe that I've used for years and we love it...I never thought of putting them in muffin tins. I might have to try this. It would sure save on time to cook them all at once instead of individual cakes on the griddle. :)

    1. It didn't take 5 minutes to whip them up, and throw them in the oven. They are great for an on-the-go breakfast, too. The little ones were begging me to make these again.
