Vegan Red Lentil Chili

Vegan Red Lentil Chili

Ingredients
2 tsp olive oil
1 medium onion, diced
2 tsp garlic
2 tbsp chili powder
1 tbsp ground cumin
1 tsp dried oregano
1 cup brown lentils
1/4 cup red lentils )
42 oz vegetable broth
14 oz water
1 can tomato sauce, 8 oz
1/2 cup green onions, diced
1 can (6 oz) black olives, drained and sliced

1 jar (12 oz.) roasted red peppers, drained.

I through all the ingredients, but the olives, in the Crock Pot, then when it was almost ready I tossed in my olives. 

Also, on a side note I only had one kind of lentil (red), so I added some Brown Rice. Wild rice would also be really good.



 While trying to decide what to make for supper, I spied a big jar of Red Lentils. On a whim, I decided to make a Vegan Red Lentil Chili. It was delicious! In fact, it was so delicious that I didn't take any pictures of the prep, or the finished product. Sorry! 

Instead I posted a picture from The First Year Blog, where I found the recipe! I hope Beth, doesn't mind. : )

Mom and I found that the Chili is also a great dip for chips! You could also wrap up any leftover Chili into burritos, make a casserole with the extras, or just about anything else.
