Happy Be-Lated Valentines Day!

Good day everyone! I did not get around to posting my Valentines post yesterday, but better late than never, yes? Of course yes!

If you are looking for something scrumptious, tasty, or otherwise delicious, you've come to the right place..er I mean post. Oh, and did I mention it's chocolate and healthy? Right, now get to work right now and whip this recipe up! 
 
Ingredients:

♦ 1 cup of nut butter (peanut, almond, sun etc. I used PB and Sunbutter)
♦ 1/3 cup raw honey
♦ 1/3 cup coconut oil (melted)
♦ 1 tablespoon vanilla
♦ 1/4 cup chia seeds (I also added Flax seeds)
♦ 1/4 cup raw cacao powder (or cocoa, or carob)
♦ 1/4 teaspoon salt
♦ 1 1/2 – 3 cups oatmeal (Adjust depending on how dense you want it. If you use more, you may want to use more honey)

Mix wet ingredients and add to the dry. Once they are combined, stick the dough in the refrigerator for an hour. When the dough is chilled, take it out and roll it into balls, pat down into a pan, or what ever you fancy. 

I chose to make "truffles", hearts, and squares.


Assemble all your ingredients. I melted my Coconut Oil and Honey together and then added in my Vanilla. It makes mixing a whole lot easier, it's hard trying to mix in clumps of cold raw honey. ; ) Believe me, I've tried and failed.


Mix until well combined.


You don't want your dough to be too dry, or two wet, just in the middle. 





Once your dough is mixed, cover the bowl and place it in the refrigerator for an hour.


Meanwhile, while waiting for your dough to chill you can dig out some cookie cutters, and prepare a container to store the cookies in.



OK, you're hours up. The dough should be chilled now, you may need to use a spoon to get it out (I did on mine). 


The dough should be easily molded into what ever shapes you want. Or you can spread some in a pan and cut shapes out. What ever ya fancy.


Since it was Valentines Day I thought hearts would be appropriate for the occasion.  




I only made two hearts because these cookies are some what rich, and a little goes a long way. 


You can see all the little seeds, oatmeal, and such in the cookie. 


Can you tell I like taking close-up pictures of food? I do, I will not deny it. 



I promise I didn't make this dough into a heart. I happened to look over whilst the camera was slung around my neck and noticed it. Needless to say it deserved a picture. 


 But, I confess I did arrange this heart.


Once you're finished making food-heart-photos you may proceed to store your cookies in a container.
